Winemaking & Appreciation

The IdeaEach year EPTA (seven in Greek) is the epitome of a fascinating exploration of Santorini sub-terroirs by Domaine Sigalas. We have selected blocks at seven villages -Oia, Imerovigli, Vourvoulos, Fira, Pyrgos, Megalochori, Akrotiri- across the island that stand out for their distinctive quality features. Each year we harvest the Assyrtiko from each village and vinify them separately. We use for our EPTA wine what we consider to be the very best among them. A truly unique Sigalas project.

VinificationTypical white vinification in stainless steel tank under controlled temperature. Lees contact for 12 months with periodic lees stirring (batonnage).

ColorMedium lemon color

Nose Quite austere with intense minerality and citrus fruits, while acidity is the backbone of the wine.

PalateA benchmark minerality complemented by citrus fruits and peach. Petrol and honey notes as the wine ages. Long aftertaste.
